The Asociación para la Protección del Patrimonio Gastronómico (APPG) is a Spanish non-governmental organisation with an international scope, dedicated to the knowledge, recognition and safeguarding of gastronomic heritage as living cultural heritage, in accordance with the principles and objectives of the 2003 UNESCO Convention for the Safeguarding of the Intangible Cultural Heritage. It operates internationally, with particular attention to Latin America.
APPG brings together a predominantly academic, multidisciplinary team specialising in gastronomy, culture, heritage and research, and maintains cooperation agreements with leading universities and academic institutions. Its work is based on an accredited methodology for the identification and certification of gastronomic heritage in communities and territories, through research and documentation processes that enable the recognition of the knowledge, practices and cultural values that constitute it.
Building on this knowledge, APPG develops safeguarding and transmission projects and provides specialised support to communities, public administrations and institutions through studies, reports and advisory services aimed at understanding, recognising and establishing appropriate strategies for the protection of their gastronomic heritage.
